Chocolate Pudding Cakes in a Jar

3/4 cup all-purpose flour
1/2 cup cocoa powder
1/2 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk or soy milk
3 tablespoons applesauce or vegetable oil
/2 cup brown sugar, packed
1/4 cup miniature semisweet chocolate chips
2 teaspoons vanilla extract

1 1/4 cups half & half

Spray jars with non-stick cooking spray. In a bowl, combine flour, 1/4 cup of cocoa powder, granulated sugar, baking powder and salt. Mix in milk and applesauce or oil. Divide mixture evenly into 6 8-oz. glass jars.

Combine brown sugar, 1/4 cup of cocoa powder and chocolate chips. Add on top of mixture in jars, dividing evenly between jars. Heat half & half in microwave until very hot but not boiling. Add vanilla to the half & half, then pour on top of mixture in each jar, distributing evenly (between 3 and 4 tablespoons per jar). Do not stir.

Place filled jars on a baking sheet, not touching each other. Bake in a preheated oven at 350 degrees F for 30 minutes or until sauce is bubbly. Serve warm or at room temperature. Adding whipped cream or ice cream is optional.

Yield: 6 8-oz. glass jars.
